Not only is this mango and carrot smoothie delicious, it is also packed with fibers and vitamins. These will give you plenty of energy when you need it the most.
It is truly one of our favorites and not just for its health properties. I actually mostly love it because it looks, tastes, and feels like a warm ray of sunshine on a cold cloudy day. So it makes the perfect breakfast to start a happy and productive day.
Some Tips for this Smoothie Recipe
If you have never used flaxseed meal before, don’t worry. It is gluten-free. I actually get mine from Bob’s Red Mill (not an affiliate, just a happy customer).
As for the touch of rhubarb in this recipe, you can find the instructions on how to make my Rhubarb Compote by just clicking here. Otherwise, any added cooked rhubarb with a little hint of sugar will have the similar result. So no worries!

Mango Carrot Ginger Smoothie
Ingredients
- 1 banana
- 1 medium carrot cut in 4
- 1 small mango (1 cup fresh or frozen)
- 2 tbsp rhubarb compote
- 1 tsp ginger extract
- 1 tbsp flaxseed meal
- 1 cup plant-based milk
Instructions
- Peel the banana, carrot, and mango.
- Cut the carrot into thick slices.
- Put everything in your blender on high until you get a homogenous and smooth texture (about 3 minutes).
Enjoy right away!
