Have you already thought of how you will show your appreciation to you mom on Mother’s Day?

Why not this easy summer salad?!

There are hundreds of ways you can make your mom (or any mom) feel appreciated. However, the most meaningful gifts are usually the small gestures and attentions. They don’t cost anything and usually bring you closer together.

My mom and I live nearly 4,000 miles apart, so I usually send her flowers and a card. But if I were with her, I would treat her to a delicious and healthy homemade brunch.

My mom has always brought happiness to people through her amazing homemade meals. And her love of cooking was passed along to my sister and myself. So this is no surprise that some of our best memories were made in the kitchen.

Growing up, our “maman” always included us in the kitchen. She would give us different tasks according to our skills and age. She taught us how to wash dishes properly and how to chop different kinds of fruit and vegetable. Beyond giving us basic cooking skills, she taught us to be persistent and daring, trying complicated recipes and not giving up. In addition, we learned patience and attention to detail by making and plating delicious dishes with her.

I believe that part of what I learned with her in our little kitchen is what made me the person I am today. So what better way to show her my love and gratitude than by now exchanging roles and cooking for her now?

But why a salad?

Our mom does not have a sweet tooth. Therefore, when dining out, she usually orders “une assiette de fromages” (a cheese plate) to finish her meal, rather than dessert. However, she loves salads and always adds some kind of fruit in hers.

This is why this Easy Summer Salad would be a great addition to our Mother’s Day brunch or dinner. It is both sweet but savory, and could be enjoy in the middle of our meal. Moreover, it is light, so she would still have appetite to indulge in delicious French cheese.

THE HEALTH BENEFITS OF THIS RECIPE

Cubed Strawberries, watermelon, and cucumber

In addition to naturally satisfying your craving for sugar, this Easy Summer Salad recipe is packed with essential vitamins and nutrients.

Although a lot of people find it tasteless and unappealing, cucumber is one of my favorite ingredients. It contains no fat, no sugar. Just a large amount of water together with some vitamins A, C, sodium, calcium, and iron. This makes it perfect for hydrating and detoxifying your body, which in turns helps clear your skin. Did I mention you can also use it in salads, smoothies, and to flavor your water?

Watermelon is also amazing for hydration, which is why people often eat it at the beach in the summer. Just one cup of watermelon provides about 20% of your daily needs in both vitamins A and C. It is also a good source of vitamin B, potassium, and magnesium. Watermelon also contains antioxidants, which help reduce inflammation, as well as citrulline which may reduce muscle soreness. Therefore, if this is something you struggle with, watermelon can be a great addition to your diet.

Finally, strawberries! Strawberries are sweet and refreshing. Just one cup of these berries contains a large range of antioxidants, as well as several vitamins, minerals, fiber, and folic acid, which makes strawberries a great ingredient for pregnant women. Be careful though! Strawberries are at the top of the 2019 Dirty Dozen list, so make sure to buy them organic to avoid pesticides!

A FEW TIPS FOR THIS RECIPE

About the ingredients

As I mentioned the Dirty Dozen list, I buy my strawberries and cucumber organic to avoid ingesting pesticides. However, I don’t care so much about whole watermelons since their hard skin protect them better. If I only buy half a watermelon, then I am a little more careful and picky.

I have made this recipe with regular balsamic vinegar, but also with raspberry and fig vinegars. It tastes good either way.

If you are not dairy-free and would prefer a more savory version of this salad, add crumbled fresh goat cheese or feta cheese.

Anything else?

This easy summer salad recipe is perfect for a nice spring or summer day. As it is sweet yet savory, it is perfect for brunch, or as a side for any meal on a sunny day, or even as a healthier dessert alternative.

If serving it for brunch, pair it with these amazing pecan banana bread (option to make it nut-free) or these gluten-free pancakes. Nevertheless, if you prefer to keep it light and on the healthier side, go with the tofu scramble.

Easy Summer Salad

This easy summer salad is a great addition to any meal. Fresh, colorful, sweet and savory, but also healthy and allergy-friendly. A bowl of sunshine!
It is free of corn, dairy, egg, gluten, nuts, peanuts, sesame, and soy.

Ingredients

  • 1 common green cucumber
  • 10 strawberries large
  • 1/2 watermelon medium

For the dressing

  • 1 tbsp olive oil extra virgin
  • 1 tbsp pomegranate balsamic vinegar
  • 1 tsp coarse salt
  • 1/2 tsp black pepper freshly ground
  • 1 tsp oregano dried

Instructions

  • Cut the watermelon in cubes.
  • Wash, peel, and dice the cucumber.
  • Wash and slice the strawberries.
  • Put all the ingredients in a salad bowl, and mix well.
  • If necessary, add more pepper and salt to taste.
  • Enjoy!
