It is truly one of my favorites and not just for its health properties. I actually mostly love it because it looks, tastes, and feels like a warm ray of sunshine on a cold cloudy day. So it makes the perfect breakfast to start a happy and productive day.

Mango Carrot Ginger Smoothie
- 1 banana
- 1 medium carrot cut in 4
- 1 small mango (1 cup fresh or frozen)
- 2 tbsp rhubarb compote
- 1 tsp ginger extract
- 1 tbsp flaxseed meal
- 1 cup almond milk
- 1 tbsp unsweetened coconut shredded
- Put everything in your blender on high until you get a homogenous and smooth texture (about 3 minutes).
